Special bevels on the blade create air pockets between the blade and food, preventing slices from sticking to the knife for cleaner and more efficient slices. The flat-cut parer is designed for detail work, and the tip makes easy work of juliennes.

Each knife in the Classic triple riveted series by Wusthof-Trident is forged from a single piece of specially tempered high carbon stainless steel to ensure outstanding strength. Each Wusthof knife is now made with PEtec, a state of the art technology featuring a computer controlled method for creating a razor sharp, long lasting edge. This technology measures the blade before sharpening, and calculates the exact angle of 14 degrees per side (for a total of 28 degrees) for each blade. The blade is then sharpened on a whetstone using precision robots. The result is an optimum cutting edge along the entire length of the blade, resulting in an extremely high initial cutting potential and exceptionally long edge retention.
